Passed Appetizer: Bacon Wrapped Dates.

Amuse Bouche: Beet Cured Salmon, with crème fraiche, radishes, on top of a whole wheat blini.

First Course: Heirloom Tomatoes, Creamy burrata, pickled figs, toasted walnuts, white balsamic vinaigrette.

Second Course: Smoked Idaho Trout, smashed fingerling potatoes, carrot purèe, chimichurri.

Third Course: Double-Cut Ham Chop, sweet potato green apple hash, burnt honey gastrique, hazlenut granola.

Intermezzo: Cherry Basil Soda.

Dessert Course: Huckleberry almond Financier, bay leaf ice cream, roasted white chocolate, huckleberry syrup.

Mignardise: Dark Chocolate sea salt truffle.
